
If I could eat fruity cream cheese danishes for every breakfast, let me tell you, I would. But we still have a wedding coming up and that much sugar makes me feel sick. So I’ve been whipping up these high protein low sugar french toasts instead. I prepare these ahead of time and then throw them in the toaster to heat them up, but if you only want one meal, feel free to scale it down. Let’s get cooking! You will need:
- 10 slices of Silver Hills Little Big Bread (or any sprouted grain bread, however will likely get 6 to 8 toasts if regular size)
- 1 cup of egg whites
- 1 cup of unsweetened almond milk
- 1 scoop (35 grams) of whey vanilla protein
- 1/4 teaspoon of cinnamon
- 1/2 teaspoon vanilla extract
- Spray oil for pan
- 3/4 cup fat free cream cheese
- 1/2 scoop (15 grams) of whey vanilla protein
- 1 cup of frozen blueberries
- 1.5 teaspoons of Stevia
First whisk 1 scoop of protein powder and the cinnamon together in a large bowl. Add your eggwhites, almond milk, and vanilla extract and whisk until there are no lumps.
Heat your pan to medium heat and spray with oil. Make sure to use a good non stick or one that you know you don’t have issues with items sticking to. Dip each piece of bread into the liquid, making sure to saturate it well and then lay on the pan. Cook for about 4 minutes or until it turns golden and then flip and do the same on the other side.
Mix together your half scoop of protein powder and fat free cream cheese. I like to use a stand or hand mixer to get it whipped nicely. If the protein powder isn’t mixing well feel free to dribble in a small amount of almond milk (no more than a teaspoon max). Once it is airy and whipped your are set.
Take your blueberries mix with the stevia and cook either over low heat for about 15 minutes, stirring often or in the microwave for 1 minute. Heat until warm and liquidy. I like the frozen blueberries for this as I find they melt down quite nicely into almost a syrup. The stove top will help some of the liquid evaporate better but the microwave is quick and easy. Just be warned, if you use the microwave, use short increments of time and watch them. Those suckers will go from ice cold to boiling all over your microwave in just a few seconds.
Plate the toast and top each piece with a heaping tablespoon of whipped cream cheese and a tablespoon or two of the berry mixture. If you meal prep I like to get little containers to fill with the cream cheese and blueberries separately and then the day I eat it I reheat the bread in the toaster and the berries in the microwave and assemble it then.
Just to note, you can totally sub out different protein powder types, I just haven’t tried myself so I’m not sure how a plant based or other one may taste! I included the grams since scoop sizes can vary drastically. If you look at the nutritional label of yours and it says one scoop equals the same amount of grams, then you are good to go!
